Roof played all four of his collegiate years at Division II North Greenville University. During his freshman year in 2019, he pitched in five games while delivering a 2.00 ERA and striking out 15 batters. He spent the summer of 2019 with the Bluefield Ridge Runners in the Appalachian League before playing 21 games in his second year, as he held a 2.51 ERA while striking out 45 batters and walking eight. He returned to NGU for his third season in 2023, appearing in 17 games while striking out 34 batters as he posted a 2.63 ERA. During the summer of 2023, he played for the Frederick Keys of the MLB Draft League and wrapped up his college career at NGU in 2024, as he played 25 games while holding a 2.18 ERA. He played his final season of summer collegiate baseball in the summer of 2024 with the Lexington County Blowfish of the Coastal Plain League.
